Crepes

I still remember the first time I had crepes. I spent the night over at a friend's house and that morning her dad made them. They were so good. Since then I became gluten free and asked her dad for the recipe. So here it is.

Ingredients:
6 eggs
1½ C flour
2 C milk
1 tsp salt
1 Tbsp powder sugar
2 tsp vanilla
Butter
Toppings of choice

Instructions:
1. Mix all the ingredients together. You can use a blender.
2. Warm up a 6 to 8 inch pan
3. Coat the bottom of the pan in butter so batter will not stick
4. Pour a little batter and swirl it. 
5. Wait until it starts to bubble then flip it.
6. Wait a little bit then remove from pan.
7. Repet steps 3-6 until batter is gone
8. Put topping on and roll them up.
9. Enjoy

Banana Bread

So far this is my favorite banana bread recipe. It taste good gluten free as well. I honestly have never made it non gluten free. I usually have little extra batter that I use as doughnuts. Eventually I'll get a mini bread pan for it. 

1 cup granulated sugar
8 Tbsp (1 stick) unsalted butter, room temperature
2 large eggs
3 ripe bananas
1 Tbsp milk
1 tsp ground cinnamon
2 cups all-purpose flour (or gluten free flour)
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 Tbsp vanilla extract
Chocolate chips (optional)

Preheat the oven to 325 degrees F. Butter a 9 x 5 x 3 inch loaf pan. 

Cream the sugar and butter in a large mixing bowl until light and fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla.

In a small bowl, mash the bananas with a fork. Mix in the milk and cinnamon. 

In another bowl, mix together the flour, baking powder, baking soda and salt. 

Add the banana mixture to the creamed mixture and stir until combined. Add dry ingredients, mixing just until flour disappears. Add chocolate chips here.

Pour batter into prepared pan and bake 1 hour to 1 hour 10 minutes, until a toothpick inserted in the center comes out clean.  Set aside to cool on a rack for 15 minutes. Remove bread from pan, invert onto rack and cool completely before slicing.

Poor Man Stroganoff

Im back! Did anyone miss me? When I got married the first time, I was trying to figure out foods I could make. One of my adopted moms gave me this recipe. Since then I became gluten free and changed this recipe to fit my needs.

Ingredients

- 1 lb hamburger
- 1 onion diced
- 1 packet of Lipton onion soup mix
- 1 medum sour cream
- noodles of choice
- 1 can of cream of mushroom
- pepper to taste

Instructions
In a pan ground the hamburger and onion until cooked and onion is translucent. Drain any extra grease.

In a pot follow introduction to cook noodles to your preference. 

Once noodles are done. Drain the water. Add rest of the ingredients and mix well.

Alpine Apricot Squares

My grandma made a gluten free version of these when I visited in April 2017. They are so good I wanted to share the recipe with you all.

MAKES 24 SQUARES  total bake time 45 min.

Ingredents:
2/3 c dried apricots
1 c of water
1/2 c of butter
1/4 c sugar
1 1/3 c all purpose flour
2 large eggs
1 c packed light brown sugar
1/2 tsp baking powder
1/4 tsp salt
1 tsp pure vanilla extract
1 tsp fresh lemon juice
1 c chopped nuts
3/4 c sweetened flaked coconut (optional)
Powder sugar

Instructions:

Preheat oven to 325°f
Rinse apricots in a small saucepan then cook apricots in boiling water for 10 min. Drain  chop and set aside.
In a medium bowl mix together butter sugar and 1 c flour. Press on to bottom of 9x13 inch pan. Bake for 25 min
In a medium bowl beat eggs and slowly add brown sugar. Stir in 1/3 c flour baking powder salt vanilla and lemon juice. Fold in nuts and apricots and coconut. Pour on top of baked crust for 20 min. Cool then dust with powder sugar.

Oven Grilled Cheese

Do you like grilled cheese, but only know how to make one at a time. Feels like before I learned how to do this. I was always at the stove making grilled cheese. Or by the time I was done the first few was already cold. This is how I now make grilled cheese. I can sit with everyone else and no one has one cold.

Ingredients
- bread
- cheese
- butter
- anything else you want to put on it

Instructions
- preheat oven to 450°
- spread butter on the side of bread that is going to be touching the cookie sheet
- put bread on the cookie sheet
- add the cheese/ anything else you want
- if you don't want another slice of bread on top. Then skip to cooking time
- add another slice of buttered bread. Butter side up
- cook for 6 min
- 1 slice it is done 2 slice cook for another 6 min.

Sorry for the lack of posting. Between being back in school and birthdays. I haven't been able to post as much. I have been trying new foods lately. So hopefully I'll get some new ideas.
